The one the decoder ranks as best available, which normally means the highest channel count. Picking a particular language track is not offered on this page yet.
Does the whole video have to be processed?
The container is read from end to end, so a long recording takes a while, but only the audio stream is actually decoded and re-encoded. That is far quicker than a full video conversion of the same file.
Can I get the audio out without any loss?
Not here: the track is re-encoded to MP3 for the sake of compatibility. One pass at this bitrate is inaudible on lectures and talks.
